Dinner in 30 Minutes? Yes Please!
One day I needed something different, something we hadn’t had in a long time for dinner. So I perused the freezer at 2:00pm like usual, trying to figure out what in the world we would have for dinner (sound familiar?!?). Then it hit me – steak stir fry!
Listen, I hate dinners with long ingredients lists and hour long cook times. This dish is ONE PAN, can be made with pantry staples, and takes LESS THAN 30 MINUTES!! Win Win.
Because my kids like different things (oy), I do make both rice and ramen on the side. They’re both fast and easy with minimal dishes too. My favorite gluten free ramen noodles are the Lotus brand Organic Millet and Brown Rice Ramen.
Also of note, you’ll see in the picture that I did NOT include bell peppers or shredded carrots. That’s only because my kids will not eat this if I have those mixed in. But do know, they add fabulous flavor, color, and fiber so add away! This recipe really is versatile, anything can be adjusted to your liking.
Last thing – this stir fry is also basically LOW FODMAP. Just be sure to enjoy the broccoli tops, not the stalks, and omit the onion for low fodmap eating.
Steak Stir Fry
Ingredients
- 2 lbs Steak sirloin, kc strip, or ribeye
- 1 red bell pepper, sliced optional
- 1.5 cups broccoli raw or frozen
- 1/2 cup shredded carrots optional
- 1-2 tbsp oil avocado, olive, or grapeseed oil
Stir Fry Sauce
- 6 tbsp coconut aminos
- 1 tbsp sesame oil
- 1-2 tbsp cane sugar or brown sugar
- 1 tsp ground ginger
- salt & pepper to taste
Instructions
- In a small bowl or measuring cup, whisk together coconut aminos, sugar, sesame oil, ground ginger, salt and pepper. Set aside.
- Slicing against the grain, cut the steak into thin strips.
- Preheat a wok or deep cast iron skillet or similar with oil. Add veggies if using (see notes). Cook on medium-high heat until golden brown.
- In the same wok/skillet, add steak strips and cook over med to med-high heat until beef is cooked through or lightly browned.
- Add veggies back to skillet with steak. Pour the marinade over everything, give it a good stir, and let simmer for about 5 minutes, or until steak is cooked through.
- Serve as is, garnish with sesame seeds if desired, or serve with cooked rice or cooked plain gluten-free ramen noodles!
